Cardamom Rolls      Tom & Kari
For the cardamom, you may either purchase ground cardamom, or whole seeds.
The ground is much more convenient, however if you have the time to shell and
grind the whole seeds, it is well worth the effort. I hope you enjoy this
Swedish tradition.
1 cup milk, scalded
1/2 cup shortening
1/2 cup sugar
1 teaspoon salt
1 teaspoon ground cardamom
1 packet yeast in 1/4-cup warm water
3 beaten eggs
4 & 1/2 cups flour
Combine first 5 ingredients. Add others. Knead. Put in covered bowl (use a
towel to cover) and let double, approximately 1 1/2 hours. Punch down.
Shape rolls into knots. Cover with towels and let rise for 45 minutes. Bake in
a 400-degree oven for approximately 8 minutes. (Be sure to keep an eye on
them while baking. Everyone knows that us Swedes cannot tell time very well!)
